Lemon Coriander Soup

Ashwini commented on my blog couple of months ago requesting a recipe of 'Lemon Coriander Soup'. I did not have the recipe and didnot know if I had it somewhere before. Sometime after that I went to a Thai restaurant and tried their Tom Yum Soup. The soup has distint flavors of lemongrass, Galangal, Kafir lime leaves. Later when I was cleaning the cilantro (coriander) I decided to try making this soup.

Lemon Coriander Soup

The basic proportion and preperation of this goes like -

stems from 1 bunch of Cilantro(coriander)

3-4 inch long stem of Lemongrass - 2

1/2 inch Ginger

1 large Tomato

1/2 Lime

salt, sugar, freshly ground black pepper - per taste

3 cups water

Crush the lemongrass stems with a pestle. Thinly slice ginger. Dice the tomato. Start boiling water. When water warm enough add washed cilantro stems, lemongrass, ginger, tomato. Let it simmer till the water is about 2.5 cups. Strain the water and start boiling it again. Now add black pepper, salt and sugar. Let it boil again. Squeeze lime juice in the soup just before taking the pot off the heat. Enjoy the soup while its warm.

Tips -

    1. You can add a piece of carrot, cauliflower, cabbage while making the cilantro broth.
    2. Use Thai ginger called Galangal if its available instead of normal ginger.
    3. Use couple of Kafir Lime leaves if they are readily available.
    4. You can put few pieces on carrots, zucchini, tomato in the second simmer.

I am not sure if Ashwini had this soup in mind when she asked me but I liked it anyway.
